- 1 cup roasted peanuts (unsalted or lightly salted)
- 1/2 cup granulated sugar
- 2 tablespoons unsalted butter
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips
- Optional: sea salt for sprinkling
Instructions
- Line a baking sheet with parchment paper.
- In a medium saucepan, combine sugar, butter, and salt over medium heat. Stir constantly until the sugar melts and the mixture turns golden brown, about 5-7 minutes.
- Remove from heat and stir in the vanilla extract.
- Add the peanuts and stir to coat them evenly with the caramel.
- Drop spoonfuls of the caramel-coated peanuts onto the prepared baking sheet. Let them cool and harden for 20-30 minutes.
- Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip each cooled peanut cluster into the melted chocolate, or drizzle chocolate over the clusters.
- Place the chocolate-covered clusters back on the parchment-lined sheet. Optional: sprinkle a tiny pinch of sea salt on top.
- Let the chocolate set completely at room temperature or in the fridge for faster results.

- You can substitute semi-sweet chocolate with milk or dark chocolate.
