Ingredients

  • 1 cup roasted peanuts (unsalted or lightly salted)
  • 1/2 cup granulated sugar
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips
  • Optional: sea salt for sprinkling

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine sugar, butter, and salt over medium heat. Stir constantly until the sugar melts and the mixture turns golden brown, about 5-7 minutes.
  3. Remove from heat and stir in the vanilla extract.
  4. Add the peanuts and stir to coat them evenly with the caramel.
  5. Drop spoonfuls of the caramel-coated peanuts onto the prepared baking sheet. Let them cool and harden for 20-30 minutes.
  6. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
  7. Dip each cooled peanut cluster into the melted chocolate, or drizzle chocolate over the clusters.
  8. Place the chocolate-covered clusters back on the parchment-lined sheet. Optional: sprinkle a tiny pinch of sea salt on top.
  9. Let the chocolate set completely at room temperature or in the fridge for faster results.

  • You can substitute semi-sweet chocolate with milk or dark chocolate.
  • Store clusters in an airtight container at room temperature for up to a week.
